On Dec. 2011, the Food and Beverage Laboratory was remodeled to give birth to a new café, where a POS system was installed for students to earn practical experiences in café operation and management.
Inside the Coffee Shop
Caf'e 409 is a welcome stop for visiting VIPs and high school students during their campus tours. It provides a professional beverage bar setting, expresso machine, ice maker, tables and chairs that simulate the business environment of a restaurant or café. And on the wall there are tableware display cabinets and storage cabinets. Virgin cocktails, tea, coffee, milk, soda, mixed juices and other non-alcoholic beverages are made and served here.
Courses Taught Here
Food and Beverage Service, Beverage Management, Seminar on Wines, Banquet Management, and Café Shop Operation and Management.
In 2017, this Laboratory was built through a competitive proposal process. With state-of-the-art coffee brewing equipment, this Laboratory aims to provide an excellent teaching as well as learning environment that keeps pace with facilities used in the industry. The full-function coffee equipment provides practical operation exercises for courses such as Café Operation & Management and Beverage Management.
With semi-automatic expresso machine, coffee bean roaster, grinder, coffee drip (hot water) kettle, and coffee tasting table, students can make hand-brewed coffee, American-style coffee, Expresso, Latte, Cappuccino, and roast high-quality coffee beans. Coordinating with baking classes, students can make perfect drinks that go with breads, cookies, cakes, and desserts (food and beverage pairings). Moreover, there are display cabinets to demonstrate coffee knowledge and various utensils, where contents reflect the café industry trends.
In the future, the lab will make quality beverages to match industry standards, as well as create diverse coffee products to meet market demand. This provides great opportunities – such as industry-academia cooperative research projects – for our students and professors as well as for those we cooperate with outside the university. Moreover, it can help our graduates to start their small businesses.
