Welcome to the Tourism College’s webpage, we thought that you must very concern our teaching ideas and goals for educating workforce of hospitality industry. In here, I share my personal teaching ideas and future challenges with you.
Personal Teaching Ideas/Views
It is very hard to describe the learning conditions between now (how students learn) and then (how I learn). In the past, the teacher only use blackboard to draw the table setting for the course of hospitality service. Fast food service was the only trend and practical training did not exist. Therefore, it is almost impossible to apply the course knowledge on the job in the real world. However, Hospitality education and practice become the trend due to the promotion of our country. For the rapid development, the first need is the front-line service people for the front and back of the houses. Hence the well-designed training is very critical to raise the service quality of the front-line staffers. Business knowledge and practical skills of hospitality industry become very important. It is my personal believe that teachers should firstly know and understand each student’s character and interesting, as well as, teachers should involve with students to build the excellent teacher-student relationships and to lead the direction of learning. To do so, the students can have the good and right learning motivations. Beside the teaching role, the teachers should play the role of friend during the after-school time; we should encourage and teach the appropriate life philosophy to students. Our university also emphasizes this human culture. This not only is a foundational idea but also is a critical thinking judgement. Teaching are passing the knowledge, interacting with students, and directing students learn how to get the knowledge.
For my personal teaching philosophy, I pay attention to students’ learning attitude and encourage them to think and to discuss. General speaking, students have the difficulties to understand what the book is about; examinations are only to test our memory. Young students should have positive thinking, so we should ask our students to practice to change all the negative words to positive words. For example, I let the students to introduce his or her strengths and the point of opportunity. The point of opportunity is an example, students usually run away due to weakness; nevertheless, students can have the positive attitudes to face the things through the point of opportunity. That is to say, changing the rule can become the opportunity. Once students and teachers have the good interactions, the learning will easily happen during the classes. It is my view that teachers should not read the word by word from the textbook to teach, instead, we should ask questions to inspire the students to think the concepts of the textbook. To do so, students can realize that these are the issues and issues can stimulate students to think. Sometimes, we can ask our students to discuss in groups (do not read the textbook in advance) to find the solutions, then after the discussions, students are allowed to read the books. Even thought, students can only have few answers, but those answers are transferring to become their knowledge. This teaching style can cultivate that students can have the self-directing learning abilities, as well as, they do not need to remember the answers from the textbooks anymore. We believe our teaching methods could inspire students’ learning power.
Introduction of Department of Hospitality Management & Future Challenges
Recently, the hospitality industry is booming in Taiwan. The program of hospitality management plays the role of educating staffers. Hospitality industry is a professional service industry; the facilities and equipment of our program meet the requirement of the industry, so the students can get the hand-on experiences and do well on the job. I am certainly sure that it is very important to combine theories and practices because of my personal life experiences as the restaurant manager and doctoral student. Both “learning by doing” and “doing by learning” are required in the hospitality industry. I personally acknowledge and recognize the school of tourism of Ming Chuan University. Our program has clear dimensions; including management abilities, practical skills, and applied research. The teaching of undergraduate students focuses on practical skills and basic management abilities. So they can apply theories into practices, as well as, practices can lead into professional management knowledge. Furthermore, the courses of graduate school can educate students’ thinking judgements of problems, through scientific thinking methods (research methodology and statistics), logical capacity, and the ability to integrate; these training can solve and answer questions. Additionally, the findings of the research can apply to enforce and to improve the abilities of practical operation and planning management. Thus, students definitively should understand the important of application of knowledge.
Due to the fierce competitions of domestic and international hospitality industry, the industrial knowledge changes rapidity. Theories and knowledge that we learned in the past are likely to fade out in the short period; so is that the life cycles of products and services of different industries become also shorter. Therefore, I personally acknowledge the trend of changes of the rapid development of knowledge. Because of abundant knowledge, it is very important to continue learning and to raise personal professional abilities within limed timeframe. My advises to students are to have positive learning attitudes and goal-oriented thinking. We can never stop the learning, both ‘learning by doing” and “doing by learning” are the critical powers to lead the growth of knowledge and thoughtful thinking. Hence, students should fully understand the important of application of knowledge. It is my hope that future students can begin to plan their own learning and career plans in order to raise the standard of the hospitality industry of Taiwan and to promote it globally.
